   the small streets of the old center of Chartres often have names that recall the merchants who once worked there. Milk street, fishmonger's place, poultry street...

   yes @sanichiban , in Paris, street art in all its forms, including mosaics, is growing on walls almost everywhere. One mosaïc artist in particular has his star exhibition in Paris at the moment: Invader.
   And in Chartres, there is a local tradition of mosaics, notably an art gallery entirely devoted to it.
